Passion for our work

From the first days of December, the pruning of the vines starts on the Estate, it is certainly the longest and toughest part of the winemaker's work and will last all winter to finish in the first days of April. At the same time, work doesn't stop in the cellar. Wines need to be clarified and bleedings for some cuvées are about to be done. The cold period helps the wine settle naturally, before being filtrated and manufactured in bottles or Bag in Boxes.

Cuvée Flo, Domaine des Tourterelles

Cuvée Flo

Its robe is intense purple. Its nose opens with complex fruits fragrances, marmalades, bilberries, blackcurrant. On the palate, the attack is large and generous with present and silky tannins. Very slightly wooded, the vanilla savors come to complete its flavor range.

  • Variety: Grenache 80%, Syrah 20%
  • Alcohol level: 14% alc. vol.
  • Year: 2014
  • Vinification: Destemmed harvest. Long maceration (4 weeks).
  • Aging: Oak barrel.
  • Gastronomic alliance: Red meats, raw milk cheeses. Deer gigot on a spit.

Hymne à Laurie Rouge

Its deep ruby robe has dark red reflections. Its nose is elegant with raspberry and blackcurrant flavors. It structure is soft, wide and pleasant. This wine is fond, round, elegant.

Hymne à Laurie Rosé

Beautiful pale pink color of grenade, bright reflections and a thin and powerful nose. A great delicacy with strawberry flavor.

  • Year: 2016
  • Vinification: Destemmed harvest. Direct pressing.
  • Aging: Tank

Merlot, Domaine des Tourterelles

Merlot

Its robe is bright garnet, its nose is intense and typical of blackcurrant shoots. Its tannins are discreet, its balance is fresh and mineral.

  • Variety: Merlot 100%
  • Alcohol level: 13% alc. vol.
  • Year: 2016
  • Vinification: Destemmed harvest. Short maceration (15 days).
  • Aging: Tank
  • Gastronomic alliance: Summer meal with roasted meats or a meat and vegetables board.

Sauvignon, Domaine des Tourterelles

Sauvignon

With Its straw yellow robe with golden reflections and an expressive nose of citruses, bark of candied orange and peach pits, this large wine is refreshed in the mouth by a slight beading and a lemony ending.

  • Variety: Sauvignon 100%
  • Alcohol level: 12% alc. vol.

  • Vinification: Destemmed harvest. Direct pressing.
  • Temperature: Fresh but not iced.
  • Gastronomic Alliance: As early as the apéritif, with a beautiful tray of seafood o a fish parrillada.
